Chocolate Fudge

Yes, this really does come from the church ladies at Clinton Presbyterian church. When I was a kid, it was part of the treats we got on Christmas Eve after “The Pageant.” I like it because it makes a REALLY big batch – about 5 lbs.! Enjoy.

You can do this stovetop in a big pot, but I like to use an electric skillet. It’s much easier to control the temperature and avoid scorching.

  • 4 ½ cups white sugar
  • 1/3 lb. margarine (2/3 cup)
  • 1 large can evaporated milk
  • 18 oz. (1 ½ bags or 3 cups) chocolate chips
  • 1 pint marshmallow fluff or 1 lb. marshmallows
  • 1 tsp vanilla
  • Pinch of slat
  • Chopped walnuts (if desired)

Mix together and slowly bring to a boil

Boil for 8 minutes, stirring constantly. Don’t get the heat too high

After 8 min. reduce heat and add 18 oz. (1 ½ bags or 3 cups) chocolate chips

Stir until dissolved.

Remove from heat and add 1 pint marshmallow fluff or 1 lb. marshmallows.

Stir until dissolved.

Add 1 tsp. vanilla, a pinch of salt and chopped walnuts, if desired. Pour into a buttered jellyroll pan.
Let cool, cut into squares (a metal ruler and a pizza wheel are handy here.)
