Oatmeal Cookies

in honor of our Nana…

  • 3 cups of shortening (Crisco- white)
  • 1 lb. of butter (soft)
  • ½ lb. of oleo (soft)
  • 6 cups of white sugar
  • 6 cups of brown sugar
  • 12 eggs
  • 9 cups of flour
  • 2 Tabsp. of salt
  • 2 Tabsp. of baking soda

Mix these three ingredients together before adding them to cookie mixture.

Mix shortening, butter, and oleo. Add  sugar and mix, then the eggs- mix well again.

Add dry ingredients (flour mixture).

Then by hand mix 18 cups of  quick oatmeal, 2 Tabsp. of vanilla. 3 cups of nuts,  and 1 and ½ pkg. of chocolate chips. Add 2 cups of raisins.

Bake at 350 degrees for 12 to 13 minutes. Best if not over baked.

You do not need to bake all the cookies from the dough. You can make the dough into rolls and freeze the rolls up to 6 months. When you want to bake some cookies take out a roll of the frozen dough. Thaw for 10 minutes at most. Slice and then bake.
