Holiday Eggnog Cheesecake

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup butter or margarine, melted
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 1 (8-ounce) package cream cheese
  • 1/4 cup granulated sugar
  • 1 cup commercially prepared eggnog
  • 1 cup whipping cream, whipped

Combine graham cracker crumbs, 1/4 cup sugar, nutmeg, and melted butter; press onto the bottom of a 9-inch springform pan.

Soften unflavored gelatin in cold water; stir over low heat until dissolved.

In another bowl, combine cream cheese and remaining sugar; beat at medium speed with an electric mixer until well blended. Gradually add the gelatin mixture and eggnog; mixing until blended.

Chill until slightly thickened. Whip cream to soft peaks and fold into the thickened mixture. Pour over the crust and chill until firm.
