- 6 chicken breasts
- 6 bunches of cilantro
- 1 two-liter bottle of lemon lime soda (or club soda)
- 1 medium-sized bottle of lime juice
Remove the base stalks of cilantro. In a blender (or food processor), combine half the cilantro, the lime juice, and enough soda to nearly fill container. Blend well.
Pound chicken flat. Place chicken in bowl and cover with cilantro mixture. Marinade approximately four hours; do not marinade more than four hours or chicken will begin cooking in marinade.
Finely chop remaining cilantro and mix 1/2 into bowl of chiken and marinade.
Grill chicken. Remove and sprinkle with remaining cilantro and serve.
