Pork Tenderloin


2 – 1 ½ pound pork tenderloins

1 large red onion

2 large tomatoes

2 green peppers

1 pound bacon


Cut tenderloins into 3 inch pieces, flatten with a mallet to one inch. Layer a slice of red onion, then a slice of tomato, followed by a slice of green pepper. Take 2 pieces of bacon and wrap the meat in a criss-cross fashion and pierce with a toothpick. Place on grill and turn frequently for 30 minutes. Makes 6-8 pieces.
