Shrimp Elegante



  • 3 lbs. of fresh or frozen shrimp
  • 2 – 6 ounce packages of frozen pea pods
  • 3 chicken bouillon cubes
  • 2 1/2 cups of boiling water
  • 1/2 cup if sliced green onion with tops
  • 3 tablespoons of soy sauce
  • 1 tsp. of salt
  • 1/4 cup of cold water
  • 4 medium tomatoes, cut into eighths


Thaw frozen shrimp. Peel and devein shrimp; set aside. Pour a little boiling water over pea pods and carefully break apart with a fork; drain immediately and set aside. In large saucepan, dissolve bouillon cubes in 2 1/2 cups of boiling water; add shrimp, green onion, soy sauce, and salt. Return to boiling; cook for 3 minutes, stirring occasionally. Slowly blend cold water into cornstarch; stir into shrimp mixture. Cook, stirring constantly, till mixture is thick and bubbly. Add tomatoes and pea pods. Cook till tomatoes are heated through, about three minutes longer. Serve over cooked rice. Serves 12.
