Shrimp Elegante

You can do this with chicken too – just substitue chicken breasts for shrimp

  • Shrimp
  • Tomatoes
  • 1 onion, chopped
  • Chicken bullion
  • 3 tbsp soy sauce
  • 4 tbsp corn starch
  • 2 packages Chinese pea pods
  • Rice

Clean shrimp and put in bowl with 1 chopped onion for about an hour. Mix well.

In large skillet bring 2 ½ cups of water to a boil with 3 chicken boullion cubes. Add 3 tbsp. of soy sauce. Add shrimp and cook about 3 minutes till shrimp are just cooked.

In small cup mix ¼ cup of water with 4 tbsp. of corn starch. Add to shrimp mixture to make heavy sauce (gravy).

Add tomatoes (1/8 inch slices) and 2 pkgs. of Chinese pea pods to shrimp mixture just till everything is hot.

Serve over rice.
