Scalloped Potatoes

  • 2 tbsp butter
  • 3 tbsp flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 cups milk
  • 1/2 cup shredded cheese
  • 1 3/4 lbs peeled and thinly sliced (~5 medium potatoes)
  • 1 medium onion, halved and thinly sliced

Preheat oven to 350.

In a small pan, melt butter. Stir in flour, salt, and pepper until smooth; gradually add milk. Bring to a boil. Cook and stir for 2 minutes (or until thickened). Remove from heat; stir in cheese until blended.

Place half of potatoes into greased  baking dish; layer with half the onion and cheese sauce. Repeat layers.

Cover and bake at 350 for 50 minutes. Uncover; bake 10-15 minutes longer, or until bubbly.

Serves 6.
