Sweet Potato Casserole

  • 2 cups canned sweet potatoes
  • 2 eggs, beaten
  • 1 1/4 cup sugar
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 cup milk
  • 1 1/2 sticks (3/4 cup) butter
  • 1 1/2 cup cornflakes
  • 1/2 cup brown sugar
  • 1 cup pecans (chopped)

Preheat oven to 400 degrees

Mix potatoes, eggs, sugar, nutmeg, cinnamon, milk and 3/4 stick butter in casserole dish.

Bake 30 minutes.

Mix cornflakes, brown sugar, pecans, and 3/4 stick butter for topping. Pour on top of baked sweet potato casserole. Put back in oven for 5-7 minutes (until light golden).
