Nana’s German Potato Salad

3 lbs of red potatoes. Boil them in water till tender about 20 minutes.

Peel the potaotes when they are cool. Then dice them into 2 cm. cubed pieces.

Put all cubed potatoes in bowl with one onion that has been chopped into very small pieces. Add 1 and 1/2 tsp. of salt and 1/2 tsp. of pepper. Mix and refrigerate.



Cut 1/2 lb  bacon into 2 x 2 inch pieces. Fry the pieces and when browned put the bacon on paper toweling.

The bacon pieces are added to the potatoes just before serving.

However, keep the bacon grease in the pan and add the following ingredients to the bacon grease. After adding each ingredient below to the bacon grease; mix well.

  • 1 c sugar
  • 1 c water
  • 1 c vinegar
  • 4 T corn starch  (to thicken)

After adding the vinegar and the mixture comes to a boil. Mix 4 TBSP of corn starch to 1/2 cup cold water and mix well. Add cornstarch/water to mixture on stove. (This will thicken it).

Then add the mixture to the potato and onion mixture and mix well. Then combine the bacon and serve.
