- 8 onions
- 4 tbsp butter
- 2 tsp Worcestershire sauce
- 4 cans of condensed beef broth or consomme
- 1/2 cup of carrots, thinly sliced
- 1/2 cup celery, thinly sliced
- 1 tbsp fresh parsley, chopped
- 1/4 tsp thyme
- 2 bay leaves
- White bread
- Swiss Gruyere
Slice about 8 onions as thin as possible.
Simmer 6 cups of onions (all onions except 1/2 cup for broth below), 4 tbsp of butter/margarine, 2 tsp Worcestershire sauce over medium heat for 30 minutes.
Make broth by combining beef broth/consomme, 2 cans of water (use empty soup cans from beef broth), carrots and celery, parsley,thyme, 1/2 cup onion,bay leaves.
Cook broth for 30 minutes and then drain vegetables.
Put the simmered onions in broth and you have a great onion soup.
Now its time to make it French: Add Croutons. Take cheap white bread, and toast it.
Put soup in bowl, crouton on top, and melt Swiss Gruyere cheese (regular Swiss cheese will work too) on top of the crouton.
